Best Ever Healthy Chocolate Pancakes

These chocolate pancakes are easy, decadent and moreover, healthy! No flour, no added sugar, no nonsense. Whip them up on a Sunday morning as a perfect little treat. Also makes for a great surprise breakfast in bed.
This pancake recipe has been in my special recipe book for years. Just as long as I have considered saving and sharing the recipes for my creations. My recipe book contains my favorite recipes which I like to make over and over again. I cannot wait to share more of them with you in the future!
But back to the beautiful pancakes! Whenever I feel like treating myself over the weekend, I pick up this recipe. However, it is essentially just a blend and cook recipe, so it is definitely doable on a weekday as well. Don’t believe me?
This recipe uses all your cupboard staples and it is a great chance to use up your ripe bananas. Remember, the riper, the sweeter, the better. If you do not have any brown bananas (and I did not as you can see from the picture), you can easily ripen them by putting them in the oven (with the peel on!) on 160°C for 20 minutes.
Depending on the size of the bananas, drop two or three of them into the blender. Add oats, eggs, baking powder, cocoa powder, vanilla and salt. Blend until smooth. I told you it was easy!
Now, let it stand for around 30 minutes so the batter can thicken. I usually use this time to do some morning yoga or prepare the different toppings for the pancakes. After the batter has thickened, heat up your pan or griddle and add some coconut oil or butter to it. Feel free to add chocolate chips to the batter at this point. Using a 1/4 measuring cup, cook small pancakes over medium low heat. You can tell that the pancakes are getting ready when they look matte around the edges and some bubbles on them have burst.
Enjoy them with fresh strawberries, maple syrup and/or ice-cream! The pancakes have zero sugar and what’s on it does not count, right?

Equipment
- Blender
Ingredients
- 2 big or 3 small ripe bananas
- 2 eggs*
- ½ cup rolled or instant oats
- ½ tsp baking powder
- 2 tbsp raw cocoa powder
- 1 tsp vanilla extract
- small pinch of salt
Toppings
- fresh berries, powdered sugar, maple syrup, ice-cream
Instructions
- Mix all the ingredients in a blender until smooth. Scrape down the sides in-between if necessary.
- Let the batter stand for half an hour in order to thicken.
- After 30 minutes, heat up butter or coconut oil in the pan.
- Using a ¼ measuring cup, fry small pancakes over medium low heat.
- Keep the ready-made pancakes warm in an oven at 60°C.
- Serve with your favorite toppings! Mine are fresh strawberries, maple syrup and powdered sugar.
